The Cortijo
Serenity and calm precede you at Cortijo Juan Salvador. From the top of the
(long) shady eucalyptus lined drive, the panoramic views over the
Mediterranean Sea prepare you for the nature induced solace you can expect
at this historic old winery with authentic features from the 18th century.
Nestled into the valley on some 6,5 hectares of private land within a
protected area of the Montes de Malaga natural park, you’ll forget that you
are within 30 minutes of the beaches and the cosmopolitan city of Malaga.
Upon entering the grand courtyard at the heart of the cortijo you may even
forget what century it is, imagining the horses and donkeys that were
housed here during the bygone days of winemaking on the estate.
Your hosts, however, will quickly bring you back to present with a warm
welcome and generous tapas and wine on arrival. Every visit to this family
run eco farm includes complimentary concierge service to help you get the
most from your holiday, and the culinary services provided by Chef David
Palacios of the on-site host family are truly first rate. Available as personal
guides for local explorations and adventures, to offer “insider”
recommendations, or simply leave you to your own designs in peace, your
hosts aim to cater each visit to each guest.
Cortijo Juan Salvador offers two separate lodgings to guests, La Higuera and
El Almendro; both with stylish contemporary décor and 3 double bedrooms,
private outdoor terraces, fully equipped kitchens and open plan dining-living
rooms. Both also feature private entrances, and shared access to the cosy
plunge pool with sun lounge. With additional opportunities for group dining
or excursions you can be as private and solitary or as social as you like.

Fodies
Young, creative and effusively enthusiastic about food, David Palacios renounced a career as
a commercial airline pilot to pursue his culinary passions. David honed his cooking skills
training in Maastricht, Netherlands where he developed the gourmet flair to match his
creative instincts. David then moved with his family to Andalucía, his father’s home-land,
where he grows fresh organic produce and edible flowers for use in his gourmet creations.
With a deep knowledge of traditional Andalucía cuisine, David adds a modern twist to the
numerous unique dishes he creates for guests at Cortijo Juan Salvador. Chef David quickly
gained accolades for his work from such press as The Wall Street Journal, Travel + Leisure
and CNN.com

La Higuera
La Higuera, built on the foundations of the old farmhouse using local materials
and by local contractors, will transport you back to its rural Andalusian roots. The accommodation
has two spectacular terraces, with views of the beautiful surrounding landscape, where guests can
enjoy the Mediterranean sun or take shelter from the sun under the porch of reeds. The interior is
also very special: impressive entrance hall with slender semicircular arch, doors dating from the
seventeenth and eighteenth centuries purchased from antique markets in the area, terracotta floors,
and marble bathrooms. All decorated with Spanish, Dutch and Oriental antiquities, with spacious
rooms to accommodate up to 8 persons. It consists of 2 triple bedrooms, 1 double bedroom, 2
bathrooms (organic cotton towels), an open kitchen, a living room with TV, heating appliances and
two large terraces (140 m²) with barbecue.

About us
We are a family run organic farm located in a hidden valley of the
Montes de Malaga with all of the peace and tranquillity of deep nature,
yet only 25 minutes from the Mediterranean and 30 minutes from the
cosmopolitan city of Malaga.
Parents Pedro and Riny moved from Pedro’s native Andalucia to Riny’s home town of Maastricht, Netherlands with their son David and his Spanish wife Rosa to start this project. David works as a successful private gourmet chef off site, as well as for guests at Cortijo Juan Salvador. He uses the organic fruit and vegetables they grow themselves in the dishes he serves, and loves to garnish with edible flowers.
As a family outfit we relish in getting to know our guests and offer
concierge service as standard, with daily touches such as fresh flowers and
lit candles. We are proud to offer such personalised attention and superior
culinary services. With our intimate local knowledge we can ensure a
pleasant and fulfilling exploration of the ‘real Spain,’ though those
preferring to stay close can enjoy miles of hiking trails around the
property or simply relax by the pool.
The final result of the renovations is a flexible structure allowing private
lodging for six (1 house), or combined (2 houses) for groups of up to
fourteen. We have maintained the rustic character of the old cortijo, and
the traditional Andalucian courtyard is as cosy and inviting as the
surrounding gardens.
As an organic farm, and given David’s passion for food and cooking,
serving local, home-grown organic produce is one of our specialities and
sources of pride. We have many fruit trees and seasonal fruit and
vegetables from the garden, which David uses in cooking for guests if
they wish, or they may also wander through the many natural acres of
the property and select fruit, citrus and veg for themselves.
We carefully conserve our water, sourced from a well and stored in a
reservoir tank, though the supply is sufficient for liberal use by guests.
Additionally, kitchen waste is composted, while paper and cardboard,
glass and plastic are recycled to minimize landfill.
